The Bikini Cocktail

Yields 10 people

For the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Cocktail (produces 850ml, to serve 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

To prepare the Syrup: Combine every items inside a pan, heat until it reaches a light boil, mixing so the sugar melts. After that, take off the heat and leave to cool down fully. Transfer into a clean bottle, cap it keeping it chilled, where it will keep for about four weeks.

To make Batch Mix: Mix the specified spirits and syrup into one big jug, let it rest for one hour, then filter it , ideally through muslin, to ensure it's fully clarified.

To serve: Add 85ml from the batch mix into your stirring glass filled with ice, and agitate lightly for about 60 seconds to chill. Pour into a cold coupe glass or a similar vessel, top with some cranberries and complete it using a light spray with the mandarin essence over the drink.
